Using a stovetop espresso maker, prepare the 6 servings according to the manufacturer’s directions.

In a small cup add sugar and 1 tablespoon of hot espresso. Beat with a spoon until smooth, frothy and pale. Add the remaining espresso and allow the foam to come on top.
