Here’s what I don’t like about commercial creamers. They’re made with artificial ingredients and flavorings, and they often have trans-fat, which is terrible for you. Besides, they’re expensive, especially if you drink more than a few cups of coffee a day like me.
Here’s what I love about making my own creamers — I make them just the way I like them. Not too sweet, not too thin. And there’s one more thing; if you can’t drink milk and dairy for whatever reason, you’ll be happy to know you can make creamer with alternative milk. Today I’ll show you how to make a coconut coffee creamer that will round up your cup of coffee. Here’s how to do it.
To make a cup of creamer, which is suitable for about eight cups of coffee, you need half a cup of coconut milk, unsweetened and as creamy as possible. And because coconut milk is often too thin, we’re also adding unsweetened coconut cream as well. Why do you need these two ingredients to be unsweetened? Because that gives us room for customization later on.
Vanilla extract gives the creamer personality but use almond extract if that’s your thing. The thing here is giving some flavor to the creamer. After all, this handy ingredient not only makes our coffee creamy but infuses it with a specific, often lovely flavor.
As for the sweetener, and this is important, I use two tablespoons of granulated sugar, so my creamer is not all that sweet compared to commercial creamers. Add more if you want yours sweeter.
To make this creamy delight, combine all the ingredients and stir well until the sugar is dissolved. Then you can pour it straight into your coffee or store it in the fridge for up to a week, just to be safe.
Try making a batch size that works for you. A cup of creamer might not be enough for a whole crowd of coffee drinkers, so double the recipe if needed.
Combine the coconut milk, coconut cream, vanilla extract and sugar in a bowl and mix with an electric hand mixer until fully dissolved and combined.
Pour into a glass or BPA-free plastic container and store in the fridge for up to a week.
Use the coconut creamer just like any other coffee creamer to add body to your coffee.
