Let’s face it, if you want to make everyone happy at a birthday, get-together or even a business meeting, then bring chocolate cake. No one says no to a fudgy slice of chocolate cake, especially when it’s homemade.
Of course, there are many types of cake out there, but my favorites are the ones that are easy to make. Although I love cake and I adore baking, sometimes I don’t want to spend the entire morning in the kitchen. That’s why today I’m sharing with you a lovely recipe for an easy chocolate cake.
There’s more, this one comes with a creamy and luscious cream cheese frosting flavored with coffee, and that takes it to another level. It tastes as it came from a fancy bakery!
Chocolate and coffee are two incredibly compatible flavors, especially if you use them in different cake elements. This recipe makes a cake as tasty as it is beautiful.
I promised this would be an easy recipe, so don’t be overwhelmed by the extensive list of ingredients below. Most of the elements you already have, including sugar, flour, cocoa powder, milk, eggs and salt. We’re also using baking powder and vanilla extract, which you surely have if you bake often.
The rest of the ingredients are for the frosting, and you can put together this creamy and glossy frosting in 5 minutes. It’s just cream cheese, powdered sugar, instant coffee and a few drops of vanilla extract. Isn’t that easy?
For the frosting:
Preheat the oven to 350°F and grease a round 9-inch baking pan.
In a large mixing bowl, combine the dry ingredients first: the sugar, flour, cocoa powder, baking powder and salt.
In the same bowl, mix in the egg, milk, oil, vanilla extract and mix for 3-5 minutes. Add the boiling water and stir.
Pour the batter into the baking pan and bake for 30-35 minutes or until cooked through.
For the coffee frosting, beat the butter and cream cheese until softened and combined. Add in the sugar, vanilla and coffee. Beat until smooth and creamy.
Remove the cake from the oven, let it cool on a rack and garnish with the coffee frosting.
