Frozen Coffee Mud Pie Recipe

Did you know we eat, on average, 23 pounds of ice cream every year? That might sound like a lot, but how else can we cool down on warm sunny days?

Here’s another stat for you. The most popular ice cream flavor is vanilla, followed by chocolate, cookies and cream and butter pecan. Coffee ice cream, which will use today, is also up there, contending the fourth place. I personally love coffee ice cream, in the old days it used to be pretty bland, but now it’s rich and intense, just like anything with coffee should be.

Coffee ice cream will be the base for today’s awesome frozen coffee mud pie. If you don’t know what a mud pie is, it’s a chocolate cake inspired in the famous Mississippi Mud Pie, which is basically chocolate over chocolate.

Our frozen coffee mud pie will be a bit different. We’re starting with an Oreo cookie pie crust, which you can either make or buy, then we’re adding two whole, high-quality coffee ice cream canisters and topping it with chocolate fudge. And the fudge is important, I’ve seen recipes calling for chocolate syrup, but you’ll agree it’s just not the same, simply buy a jar of fudge, you won’t regret it. Finally, we’ll top our cake with a fluffy dollop of whipped cream.

You won’t always find coffee ice cream with real ground coffee mixed in it, which adds a nice texture to the mud pie, but if you do, try it. Otherwise, any top-shelf coffee ice cream will do.

This no-bake, effortless cake is decadent and chocolatey, and quite festive too, it’s perfect for out-of-the-ordinary birthday cakes of get-togethers with friends. It’s so easy to make even your kids can do it, so consider making this one a family project.

Start making your cheesecake crust, mixing the crushed Oreo cookies, sugar and the melted butter to form a paste. Press it into a 9-inch pie mold with your fingers on the bottom and sides. Try to achieve a consistent thickness.

Freeze the crust for 20 minutes.

Spread the softened ice cream over the hardened Oreo pie crust and flatten with a spatula or a spoon.

Immediately top the ice cream with the chocolate fudge.

Freeze for at least 2 hours or overnight.

Before serving, whip your heavy whipping cream with the sugar and top each slice of frozen coffee mud pie with a dollop of cream.
