I think coffee and s’mores is the best combination and this pie proves that.

When I tried this recipe for the first time, I was blown away because to be honest, the pie turned out to be great. It tasted better than my expectations and now, it has become one of my favorite desserts

Directions

Crust:

  1. To make the crust, mix the finely grounded graham crackers, heavy cream, melted dark chocolate, and melted butter in the bowl.

  2. Once properly mixed, press down the crust mixture in the desired pie dish (press up the sides properly as well). Put the crust in the refrigerator while you prepare coffee ganache and meringue.

Coffee Ganache:

  1.  Take a small saucepan, add heavy cream, coffee beans (grounded) and 2 Tbsp. of water and heat it on low heat. Mix these ingredients until the mixture starts to boil. Once the mixture boils, take it off from the heat and set it aside for about 5 minutes.

  2.  Meanwhile, add dark chocolate and butter to a large bowl and mix well.

  3. Once the cream mixture cools down after setting it aside for 5 minutes, strain it through a fine-mesh sieve into the large bowl with the chocolate and butter mix. Using an electric mixer, mix it until the ganache reaches a smooth consistency.

  4. Pour the ganache onto the crust into the pie dish. Smooth out the top of the ganache and chill for about 1 hour (until set) in the refrigerator.

Meringue

  1. Beat 2 large egg whites with the help of an electric mixer with dry beaters. Beat the egg whites until they reach a light and frothy consistency.

  2.  Add ½ cup of sugar in the egg whites gradually (continue beating the egg whites until the meringue is stiff).

  3. Pour the meringue on the coffee ganache with the help of a spoon. Make stiff peaks from the meringue to make it more presentable. If you want, you can also toast the meringue using a kitchen torch.
