Coffee lovers tend to carry over mocha flavors into many dishes. Mocha desserts are becoming more and more popular because coffee is not only delicious on its own, but in baked goods too! Especially ones that contain chocolate.
A good cookie has a sweet, buttery dough with varying textures and flavors. That’s why these Sea Salt White Mocha Cookies are so incredible! They combine espresso-scented dough, white chocolate, walnuts, and flaky sea salt for a crunchy, chewy, salty, sweet cookie unlike any you have ever had before.
The recipe starts with using two types of sugar; brown and white granulated sugar. By combining the two with melted butter, you get a base of sweetness from the white sugar and a deeper, richer sweetness from the brown sugar. Mixing the two adds complexity and chew to this buttery cookie.
Cookie dough is extremely easy to make, and this one couldn’t be easier. Pantry staples like all-purpose flour, baking soda, baking powder, and vanilla extract are used. The special ingredient inside the cookie dough is instant espresso powder, which is what gives these cookies their mocha flavor. Only a small amount is used, so these cookies are not overpowering.
One of the best mocha drinks is a white chocolate mocha, and that is the drink that inspired this cookie recipe. Suspended within the cookie are beautiful white chocolate chips and walnuts. One melts in your mouth as you bite into the cookie and the other adds a nutty crunch that highlights the coffee-flavored cookie.
The best part of this cookie is what happens after baking. Flaky sea salt tops each cookie to offset the sweetness of the cookie, leading to a balanced sweet-salty bite with a flaky crunch on top. You get crunch from the walnuts and the flaky sea salt, which is so satisfying in this little crispy cookie.
If you are not a fan of white chocolate, no worries. You can interchange with milk or dark chocolate chips instead to fit your tastes. No matter the chocolate you use, the sea salt highlights the chocolate flavor beautifully. If you’re adventurous, add all three types of chocolate to the cookie!
Make these cookies for a gathering, bake sale or coffee date. Sea Salt White Mocha Cookies go very well with a tall coffee, hot chocolate, or tea. Since these cookies are inspired by a white mocha, drink one alongside your cookie.
Preheat the oven to 375 degrees F. Line two rimmed baking sheets with parchment paper and set aside.
In a large bowl, mix the brown sugar, white sugar, and cooled melted butter. Incorporate with a hand mixer until well combined.
Add the egg and stir to incorporate. Then add the vanilla and espresso powder, beating after each addition.
In another bowl, combine the flour, salt, baking powder, and baking soda. Mix until well combined.
Incorporate the dry ingredients into the wet ingredients, folding with a spatula to not overmix. When the dough is mostly incorporated, add the white chocolate chips and the walnuts. Fold until everything just comes together, do not overwork the dough.
Scoop rounded tablespoons of dough evenly across the baking sheets, leaving about 2 inches of room in between each cookie. Bake for 10 minutes in a preheated oven until the edges start to turn golden brown. For more even browning, rotate the cookies halfway through baking time.
As soon as the cookies come out of the oven, sprinkle each with some flaky sea salt. Remove to a wire rack to cool completely before enjoying.
