Preheat the oven to 375 degrees F. Line two rimmed baking sheets with parchment paper and set aside.


In a large bowl, mix the brown sugar, white sugar, and cooled melted butter. Incorporate with a hand mixer until well combined.


Add the egg and stir to incorporate. Then add the vanilla and espresso powder, beating after each addition.


In another bowl, combine the flour, salt, baking powder, and baking soda. Mix until well combined.


Incorporate the dry ingredients into the wet ingredients, folding with a spatula to not overmix. When the dough is mostly incorporated, add the white chocolate chips and the walnuts. Fold until everything just comes together, do not overwork the dough.


Scoop rounded tablespoons of dough evenly across the baking sheets, leaving about 2 inches of room in between each cookie. Bake for 10 minutes in a preheated oven until the edges start to turn golden brown. For more even browning, rotate the cookies halfway through baking time.
